These blondies take inspiration from a recipe card that I received with some Sukrin products last Christmas. Unfortunately, the exact recipe is no longer on the Sukrin website so I tried to create my own with the addition of protein powder to give that extra boost of protein. I hope you enjoy and tag me if you try the recipe!
Ingredients
- 90g butter or oil (I used Flora light)
- 75g sweetener (I used 50g Sukrin gold, 25g Natvia)
- 1 medium egg
- 110g almond flour (I used Sukrin)
- 20g protein powder (whey – MyProtein, pea – MissFits)
- 25ml semi-skimmed milk
- Chocolate chips and dried fruit (I used 2 packets of Whitworth shots)
Method
- Heat the oven to 180 degrees Celsius
- Grease the tin in preparation
- Melt the butter
- Add the sweetener to the melted butter
- Beat the egg into the mixture
- Mix in the almond flour and whey protein powder
- Add the milk to form a batter consistency
- Add the chocolate chips and dried fruit
- Pour the mixture into your tin
- Bake to approximately 15-18 mins (do the knife test init)
