White Chocolate and Berry Blondies Recipe

These blondies take inspiration from a recipe card that I received with some Sukrin products last Christmas. Unfortunately, the exact recipe is no longer on the Sukrin website so I tried to create my own with the addition of protein powder to give that extra boost of protein. I hope you enjoy and tag me if you try the recipe!


  • 90g butter or oil (I used Flora light)
  • 75g sweetener (I used 50g Sukrin gold, 25g Natvia)
  • 1 medium egg
  • 110g almond flour (I used Sukrin)
  • 20g protein powder (whey – MyProtein, pea – MissFits)
  • 25ml semi-skimmed milk
  • Chocolate chips and dried fruit (I used 2 packets of Whitworth shots)


  1. Heat the oven to 180 degrees Celsius
  2. Grease the tin in preparation
  3. Melt the butter
  4. Add the sweetener to the melted butter
  5. Beat the egg into the mixture
  6. Mix in the almond flour and whey protein powder
  7. Add the milk to form a batter consistency
  8. Add the chocolate chips and dried fruit
  9. Pour the mixture into your tin
  10. Bake to approximately 15-18 mins (do the knife test init)
